Looking for the perfect vegan side dish? This hand-selected list features easy recipes for any occasion from family dinner to Christmas, cookout, potlucks and so much more. The following zucchini fries are easy to make with only 10 minutes of prep time!

Baked Zucchini Fries

  • ¾ cup bread crumbs
  • ½ teaspoon paprika
  • ½ teaspoon chili powder
  • 1 teaspoon nutritional yeast
  • ⅓ cup soy milk, unsweetened (80 ml)
  • 1 tablespoon mustard
  • 1 medium zucchini
  • Salt & pepper to taste

  1. Preheat your oven to 400 °F (200 °C) and line a baking sheet with parchment paper.
  2. Add breadcrumbs and spices to one bowl and soy milk and mustard to another bowl. Mix both with a spoon to combine.
  3. Slice the zucchini into long and thin fries. Dip each zucchini stick into the milk mixture, then into the breadcrumbs mixture, coating it evenly.
  4. Lay on the prepared baking sheet and repeat with the remaining zucchini sticks.
  5. Place in the oven for 20-30 minutes until the fries are crispy.
  6. Remove them from the heat and allow to cool for a few minutes before serving them with your favorite dipping sauce.

  1. So many great ideas here! I love eating vegan (even though I’m not strict about it), and jamming in as many great veggies as I can. Thanks for all the terrific inspiration … I’ve just gotta decide where to start lol!
