Ingredients

Baked Zucchini Fries

  • ¾ cup bread crumbs
  • ½ teaspoon paprika
  • ½ teaspoon chili powder
  • 1 teaspoon nutritional yeast
  • ⅓ cup soy milk, unsweetened (80 ml)
  • 1 tablespoon mustard
  • 1 medium zucchini
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 400 °F (200 °C) and line a baking sheet with parchment paper.
  2. Add breadcrumbs and spices to one bowl and soy milk and mustard to another bowl. Mix both with a spoon to combine.
  3. Slice the zucchini into long and thin fries. Dip each zucchini stick into the milk mixture, then into the breadcrumbs mixture, coating it evenly.
  4. Lay on the prepared baking sheet and repeat with the remaining zucchini sticks.
  5. Place in the oven for 20-30 minutes until the fries are crispy.
  6. Remove them from the heat and allow to cool for a few minutes before serving them with your favorite dipping sauce.

Notes

  • Feel free to use your favorite spices for this recipe!
  • Soy milk can be replaced with any unflavored dairy-free milk.
