Ingredients

Baked Zucchini Fries

  • ¾ cup bread crumbs
  • ½ teaspoon paprika
  • ½ teaspoon chili powder
  • 1 teaspoon nutritional yeast
  • cup soy milk unsweetened (80 ml)
  • 1 tablespoon mustard
  • 1 medium zucchini
  • Salt & pepper to taste

Instructions

  • Preheat your oven to 400 °F (200 °C) and line a baking sheet with parchment paper.
  • Add breadcrumbs and spices to one bowl and soy milk and mustard to another bowl. Mix both with a spoon to combine.
  • Slice the zucchini into long and thin fries. Dip each zucchini stick into the milk mixture, then into the breadcrumbs mixture, coating it evenly.
  • Lay on the prepared baking sheet and repeat with the remaining zucchini sticks.
  • Place in the oven for 20-30 minutes until the fries are crispy.
  • Remove them from the heat and allow to cool for a few minutes before serving them with your favorite dipping sauce.

Notes

  • Feel free to use your favorite spices for this recipe!
  • Soy milk can be replaced with any unflavored dairy-free milk.
