But first, here are some beginner tips to make the best veggie wraps!

What to put in vegan wraps?

Classic vegan wrap fillings are hummus or other vegan spreads, raw or roasted vegetables, smashed beans or baked tofu, cooked grains or potatoes and sauces like ranch dressing or BBQ sauce.

Making plant-based wraps is super easy, and you can improvise with whatever you’ve got in your kitchen.

Here’s a basic blueprint with ideas for your different components!

  • Wraps: Collard greens, swiss chard, kale, large lettuce leaves (romaine works best), tortilla wraps
  • Veggies: cucumbers, bell pepper, red cabbage, green onion, radishes, tomatoes, avocado, sprouts, beets, cauliflower rice, cooked or roasted veggies like eggplant or zucchini
  • Complex Carbs: millet, quinoa, rice, couscous,, potatoes, sweet potatoes

Here’s the key: your wraps need a nice, sticky base that can hold the ingredients together and give them some texture.

This can be anything from cooked millet or quinoa, smashed beans or avocado, as well as creamy sauces and dips like cashew sour cream, hummus, guacamole or a soy yogurt sauce.

Can you make wraps ahead of time?

These tasty and healthy vegan wraps are perfect portable lunches for work or school! The following quick veggie wraps are assembled within 5 minutes in the morning and really tasty!
Serves 2 wraps

Ingredients

  • 2 tortilla wraps whole grain or gluten-free
  • ½ cup hummus 120 g
  • 1 cup mixed leafy greens 30 g
  • ½ avocado sliced
  • 1 medium-sized tomato chopped
  • red bell pepper sliced
  • 1 carrot shredded

Instructions

  • Divide the hummus evenly between your two wraps and spread it in the bottom third of the wrap.
  • Add leafy greens, avocado, tomato, bell pepper and carrot on your hummus layer.
  • Sprinkle with black pepper, nutritional yeast or some vegan cheese shreds.
  • Fold the wraps tightly without breaking them, tucking in all of the veggies with the first roll and then rolling firmly to the end.
  • Cut in half and enjoy right away or store in the fridge for a quick portable lunch!

  1. There are some great ideas here that I can’t wait to try— thanks!
    I was hungry yesterday and created my own wrap that I’m quite pleased with. I sautéed chickpeas and garlic in olive oil with a little crushed red pepper and salt. Then I added kale, artichoke hearts chopped, kalamata olives along with some of the brine—and cooked until the kale was tender. Lastly I stirred i. A little tahini and fresh lemon juice. I put this mixture on a heated sprouted grain tortilla. ????
