Everyone will love these scrumptious vegan Cinco de Mayo recipes! Featuring classic Mexican appetizers, dips, drinks and meals, you’ll be able to create the perfect crowd-pleasing menu with our list. The following black bean corn salad is so easy to make in under 10 minutes and perfect for meal prep!
Serves 6

Ingredients

Black Bean Corn Salad

  • 1 15- oz can black beans 400 g, drained
  • 1 cup corn 165 g, drained
  • 1 onion finely chopped
  • 2 tomatoes chopped
  • ½ bell pepper diced
  • 1 avocado cubed
  • Cilantro leaves to taste

Dressing

  • 3 tablespoons olive oil
  • 2 tablespoons lime juice
  • ½ teaspoon salt
  • Cayenne pepper to taste

Instructions

  • Whisk together all ingredients for the dressing in a large bowl. 
  • Add all ingredients for the salad to your dressing and combine with a large spoon.
  • Adjust to taste preferences, then serve immediately!

Notes

  • Feel free to add some jalapeño and cumin to your salad!
  • Serve with fresh bread, tortilla chips or in tacos.
