Black Bean Corn Salad
- 1 15-oz can black beans (400 g), drained
- 1 cup corn (165 g), drained
- 1 onion, finely chopped
- 2 tomatoes, chopped
- ½ bell pepper, diced
- 1 avocado, cubed
- Cilantro leaves, to taste
- 3 tablespoons olive oil
- 2 tablespoons lime juice
- ½ teaspoon salt
- Cayenne pepper, to taste
- Whisk together all ingredients for the dressing in a large bowl.
- Add all ingredients for the salad to your dressing and combine with a large spoon.
