The following black bean corn salad is so easy to make in under 10 minutes and perfect for meal prep!

Ingredients

Black Bean Corn Salad

  • 1 15-oz can black beans (400 g), drained
  • 1 cup corn (165 g), drained
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • ½ bell pepper, diced
  • 1 avocado, cubed
  • Cilantro leaves, to taste

Dressing

  • 3 tablespoons olive oil
  • 2 tablespoons lime juice
  • ½ teaspoon salt
  • Cayenne pepper, to taste

Instructions

  1. Whisk together all ingredients for the dressing in a large bowl. 
  2. Add all ingredients for the salad to your dressing and combine with a large spoon.
  3. Adjust to taste preferences, then serve immediately!

Notes

  • Feel free to add some jalapeño and cumin to your salad!
  • Serve with fresh bread, tortilla chips or in tacos.
