I tried the vegan tortilla soup, and it was delicious. I added a bit more jalapeño because I LOVE more spice. I noticed that more than half these mexican recipes include black beans, why does everything include black beans? Is that your view on mexican cuisine? Also Mexicans use pinto beans A LOT MORE!

    Reply
    • thanks so much for the feedback, Heidi! I didn’t notice that this article featured so many black beans… I know that Mexican cuisine is more than just that, must have been coincidence. When I update the list, I’ll be sure to add recipes with pinto beans! ;)
