Ingredients

One Bowl Vegan Cake

  • 1 cup brown sugar (220 g)
  • 6 tbsp canola oil
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour (120 g)
  • â…“ cup cocoa powder (40 g)
  • 2 tsp baking powder
  • 1 cup soy milk (240 ml)

Frosting

  • ¼ cup vegan butter (56 g)
  • ½ tsp vanilla extract
  • ½ cup cocoa powder (60 g)
  • 2 cups icing sugar (55 g)
  • 1 tbsp soy milk
  • Funfetti

Instructions

  1. Preheat your oven to 350 °F (180 °C) and line a 9x9 inch cake pan with paper.
  2. Combine sugar, oil, and vanilla in a large mixing bowl. Stir in flour, cocoa powder, and baking powder.
  3. Whisk until smooth while slowly adding the soy milk. Pour into your prepared cake pan and place into the oven.

  5. Beat the vegan butter, vanilla, and cocoa powder with an electric mixer to create the frosting. Add half of the icing sugar and keep beating until creamy.
  6. Slowly add the rest of the icing sugar and soy milk. Continue beating until the frosting becomes smooth and creamy.
  7. Using a cake knife or spatula, spread the frosting over the top of the cooled cake. Decorate with sprinkles or funfetti and serve!
