Let’s make the best of berry season with these sweet and savory vegan blueberry recipes! Fresh, juicy, colorful and delectable ideas for the whole family. The following quick and easy vegan blueberry oatmeal is perfect for busy mornings and endlessly customizable.

Ingredients

Blueberry Oatmeal

  • 1 cup rolled oats (90 g)
  • 2.5 cups soy milk (600 ml)
  • 1 cup blueberries (150 g)
  • 2 tablespoons brown sugar

Toppings (optional)

  • Sliced apple
  • Sliced banana
  • Raisins
  • Crushed nuts
  • Toasted coconut

Instructions

  1. Put the oats, soy milk, blueberries and sugar in a medium-sized saucepan. Place over high heat and bring to a boil, stirring frequently.
  2. Cook over medium heat for 8-10 minutes until the oats have absorbed all of the liquid, stirring occasionally.
  3. Remove from heat and divide between two serving bowls. Add your favorite toppings and enjoy!

Notes

  • You can use fresh or frozen blueberries for this recipe. Instead of soy milk, use any dairy-free milk of your choice.
