How to make blueberry vinaigrette

Add all ingredients to a blender and blend until smooth. Adjust to taste preferences by using more salt, vinegar, maple syrup or soy yogurt.

Suggested swaps & add-ins:

  • Balsamic: choose between light or dark or replace with apple cider vinegar
  • Blueberries: swap for raspberries or strawberries! You can even use frozen & thawed ones.
  • Soy yogurt: any unflavored dairy-free yogurt works. To make the dressing thinner, use soy milk instead.
  • Maple syrup: use rice, agave or cane sugar instead.
  • Herbs: basil, oregano and thyme pair well.

Make the blueberry dressing richer by swapping vegan yogurt for cashew sour cream! You can also add a splash of olive oil or your favorite oil for salad dressings.

Ingredients

  • ½ cup fresh blueberries (75 g)
  • 3 tablespoons balsamic vinegar
  • 3 tablespoons soy yogurt
  • 2 tablespoons water
  • 1 teaspoon maple syrup
  • Salt and pepper to taste

Instructions

  1. Add all ingredients to a blender and blend until smooth
  2. Adjust to taste preferences by adding more vinegar, syrup, salt or pepper.
  3. Use immediately or store in a lidded container in the fridge for up to 5 days.

Notes

  • This blueberry dressing thickens over time! Thin out with water, vinegar or s splash of soy milk if needed.
  • We like dijon mustard for this recipe but feel free to use your favorite!
  • Feel free to drizzle in some olive oil when processing your dressing.
