Ingredients

Nice cream base

  • 2 bananas, chopped & frozen
  • ¼ cup soy milk

Chocolate version

  • 2 tbsp cacao powder
  • Pinch cinnamon
  • Pinch salt
  • Crushed hazelnuts for topping

Peanut butter

Berry nice cream

  • 1 cup mixed frozen berries
  • Splash of additional soy milk
  • Pinch vanilla powder

Tropical flavors

  • ½ cup frozen pineapple or mango
  • ¼ cup coconut milk
  • Shredded coconut for topping

Instructions

  1. Prepare your frozen bananas by peeling and chopping ripe bananas and placing them in an air-tight container in the freezer overnight or longer.
  2. Once ready to make your easy and healthy vegan ice cream, place about 2 frozen bananas, soy milk and any of the add-ins to create your desired flavor in your high-speed blender.
  3. You might want to let the bananas defrost for a few minutes before blending them! Then, process until creamy and smooth.
  4. Stop and scrape down the sides if needed and add some more liquid if the ice cream doesn’t come together.
  5. Serve with any toppings of your choice and enjoy immediately!

Notes

  • Unfortunately, blended banana ice cream doesn’t scoop well once frozen, so you should enjoy it right away. 
  • You can make so many flavors of vegan ice cream by adding different spices, nuts, seeds, fruit and non-dairy milk to your base!
