Ingredients

Sweet Potato Soup

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 2 celery stalks, chopped
  • 2 large sweet potatoes, cubed (about 5 cups)
  • 4 cups vegetable broth
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • Pinch of ginger powder
  • 1 cup coconut milk (240 ml)
  • Salt & pepper to taste

Instructions

  1. Place a large pot over medium heat and sauté onion, garlic and celery in olive oil for 3-4 minutes. Stir occasionally.
  2. Add the sweet potatoes, broth and spices. Bring to a boil, then heat and let it simmer for 20 minutes or until the sweet potatoes are soft.
  3. Pour in the coconut milk, then puree the soup using an immersion blender. Adjust to taste preferences and serve warm with a side of crusty bread or salad!

Notes

  • Sprinkle with additional pepper and make pretty swirls using vegan sour cream if wanted.
  • Any leftover soup can be stored in an airtight container in the fridge for several days. Be sure to let it cool completely before transferring it!
