Reduce the time you spend cooking dinner and let the oven do the work! This carefully selected list of vegan sheet pan recipes is the perfect resource for making simple, nutritious dinners with minimal preparation and cleanup.
Serves 3

Ingredients

Chickpea Veggie Tray Bake

  • 1 lb small potatoes
  • 2 onions wedged
  • 15 cherry tomatoes
  • 1 14- oz can chickpeas drained and rinsed
  • 2 bell peppers sliced
  • 2-3 tbsp olive oil
  • 2 teaspoons Indian spice mix
  • Good pinch of salt
  • Hot paprika optional

Instructions

  • Heat the oven to 400°F/200°C.
  • Toss all of the ingredients into a large roasting tray. Drizzle with olive oil and add spices to taste.
  • Stir to combine until everything is coated.
  • Place in the oven for 20 minutes, then give it a quick stir. Roast for 10 more minutes but watch so that nothing is burning!
  • Serve warm with fresh herbs and your favorite sauces. Any leftovers make for a great lunch when adding to salad.

  • We sometimes turn the tray around for the second bake.
