Ingredients

Quick Vegan Tacos

  • 12 crispy taco shells
  • 2 15- oz cans chickpeas drained
  • 1 tablespoon olive oil
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • Pinch of cayenne pepper
  • Guacamole
  • Fresh salsa

Instructions

  • Prepare the taco shells according to package instructions.
  • Add the chickpeas, olive oil, and spices to a non-stick pan. Cook over medium-high heat until warmed through.
  • Fill your taco shells with guacamole, fresh salsa, and top with pan-fried chickpeas. Enjoy!

Notes

  • Swap the chickpeas for your favorite beans or brown lentils. Cubed tofu also works!
  • Drizzle with additional sour cream if wanted.
