Quick Vegan Tacos 12 crispy taco shells 2 15- oz cans chickpeas drained 1 tablespoon olive oil ½ teaspoon smoked paprika ½ teaspoon salt Pinch of cayenne pepper Guacamole Fresh salsa
Prepare the taco shells according to package instructions.
Add the chickpeas, olive oil, and spices to a non-stick pan. Cook over medium-high heat until warmed through.
Fill your taco shells with guacamole, fresh salsa, and top with pan-fried chickpeas. Enjoy!
Swap the chickpeas for your favorite beans or brown lentils. Cubed tofu also works!
Drizzle with additional sour cream if wanted.
