These vegan comfort dishes are perfect for adding smiles to your dinner table! Each recipe gives a nurturing sense of well-being and is packed with wholesome ingredients. The following vegan corn chowder is a comfort classic turned vegan and healthy!

Ingredients

Vegan Corn Chowder

  • 1 tablespoon olive oil
  • 1 white onion, diced
  • 4-5 cups vegetable broth (about 1 liter)
  • ½ teaspoon smoked paprika
  • 4 cups corn (640 g)
  • 3 large potatoes
  • 1 cup cashews (130 g)
  • ½ cup nutritional yeast (30 g)
  • Salt and pepper, to taste
  • Fresh herbs, optional

Instructions

  1. Place a large soup pot over medium heat and add olive oil and onion. Cook for a few minutes until translucent.
  2. Pour in the vegetable broth and add corn and potatoes. Season with salt, pepper, and smoked paprika.
  3. Bring to a boil, then let simmer for 10 minutes or until the potatoes are fork-tender.
  4. Place cashews, nutritional yeast, and half of the soup into your high-speed blender. Blend until creamy, then add back to the soup pot and stir to combine.
  5. Adjust to taste preferences, then divide between serving bowls and add desired toppings. Enjoy!

Notes

  • Add some vegan sour cream or vegan bacon to your corn chowder!
  • You can use coconut milk, cashew butter, or almond butter instead of whole cashews. In this case, an immersion blender can be used to make the soup creamy.
