Ingredients

Vegan Corn Chowder

  • 1 tablespoon olive oil
  • 1 white onion diced
  • 4-5 cups vegetable broth about 1 liter
  • ½ teaspoon smoked paprika
  • 4 cups corn 640 g
  • 3 large potatoes
  • 1 cup cashews 130 g
  • ½ cup nutritional yeast 30 g
  • Salt and pepper to taste
  • Fresh herbs optional

Instructions

  • Place a large soup pot over medium heat and add olive oil and onion. Cook for a few minutes until translucent.
  • Pour in the vegetable broth and add corn and potatoes. Season with salt, pepper, and smoked paprika.
  • Bring to a boil, then let simmer for 10 minutes or until the potatoes are fork-tender.
  • Place cashews, nutritional yeast, and half of the soup into your high-speed blender. Blend until creamy, then add back to the soup pot and stir to combine.
  • Adjust to taste preferences, then divide between serving bowls and add desired toppings. Enjoy!

Notes

  • Add some vegan sour cream or vegan bacon to your corn chowder!
  • You can use coconut milk, cashew butter, or almond butter instead of whole cashews. In this case, an immersion blender can be used to make the soup creamy.
