Ingredients
Vegan Corn Chowder
1tablespoonolive oil
1white oniondiced
4-5cupsvegetable brothabout 1 liter
½teaspoonsmoked paprika
4cupscorn640 g
3large potatoes
1cupcashews130 g
½cupnutritional yeast30 g
Salt and pepperto taste
Fresh herbsoptional
Instructions
Place a large soup pot over medium heat and add olive oil and onion. Cook for a few minutes until translucent.
Pour in the vegetable broth and add corn and potatoes. Season with salt, pepper, and smoked paprika.
Bring to a boil, then let simmer for 10 minutes or until the potatoes are fork-tender.
Place cashews, nutritional yeast, and half of the soup into your high-speed blender. Blend until creamy, then add back to the soup pot and stir to combine.
Adjust to taste preferences, then divide between serving bowls and add desired toppings. Enjoy!
Notes
Add some vegan sour cream or vegan bacon to your corn chowder!
You can use coconut milk, cashew butter, or almond butter instead of whole cashews. In this case, an immersion blender can be used to make the soup creamy.
