Vegan Taco Soup
- 1 large onion, diced
- 1 tablespoon olive oil
- 4 teaspoons taco seasoning
- 1 cup Beyond Meat crumbles
- 4 cups vegetable broth
- 1 10-oz can diced tomatoes
- 1 15-oz can pinto beans, drained
- 1 15 oz can kidney beans, drained
- 1 15 oz can black beans, drained
- 1 cup frozen corn
- Lemon juice, to taste
- Tortilla chips
- Vegan shredded cheese to taste
Instructions
- In a medium-sized pot, sauté onion in olive oil until translucent. Stir frequently to avoid sticking.
- Add taco seasoning and vegan crumbles. Sauté for 3 more minutes.
- Add vegetable broth, diced tomatoes, canned beans, and corn. Turn up the heat to bring your soup to a boil.
- Reduce heat and simmer with a closed lid for 15 minutes.
- Adjust to taste preferences and divide between serving bowls. Top with lemon juice, tortilla chips, and vegan shredded cheese. Enjoy!
