Skip the lactose with these delicious dairy-free desserts! Our selection includes frozen treats, baked goods, and other crowd-pleasing recipes. The following mug cake is super quick and easy to make and really versatile!

Ingredients

Easy Mug Cake

  • 1 tsp flax seeds
  • 5 tbsp oat flour
  • 1 tbsp vegan vanilla protein powder
  • ½ tsp baking powder
  • 1 tsp brown sugar
  • 3 tbsp soy milk
  • 1 tbsp almond butter

Instructions

  1. In a small bowl, mix the flax seeds with 2 tsp water. Set aside so the mixture can thicken.
  2. Combine all dry ingredients in a mixing bowl. Stir in soy milk, almond butter, and flax egg replacement. 
  3. Lightly grease a large microwave-safe mug (or two small ones) and fill it with your batter.
  4. Place in the microwave for 2-3 minutes, depending on the heat level of your microwave! We usually bake it at medium heat.
  5. Check with a toothpick if your cake is done or needs another round of microwaving!
  6. Enjoy warm on its own or with your favorite toppings.

Notes

  • Add chopped nuts, chocolate chips, frozen berries, jam, or sprinkle to the cake to jazz it up!
  • Instead of flax seeds, use any egg replacement. Vegan yogurt works as well!
