Easy Mug Cake
- 1 tsp flax seeds
- 5 tbsp oat flour
- 1 tbsp vegan vanilla protein powder
- ½ tsp baking powder
- 1 tsp brown sugar
- 3 tbsp soy milk
- 1 tbsp almond butter
- In a small bowl, mix the flax seeds with 2 tsp water. Set aside so the mixture can thicken.
- Combine all dry ingredients in a mixing bowl. Stir in soy milk, almond butter, and flax egg replacement.
- Lightly grease a large microwave-safe mug (or two small ones) and fill it with your batter.
- Place in the microwave for 2-3 minutes, depending on the heat level of your microwave! We usually bake it at medium heat.
- Check with a toothpick if your cake is done or needs another round of microwaving!
- Enjoy warm on its own or with your favorite toppings.
- Add chopped nuts, chocolate chips, frozen berries, jam, or sprinkle to the cake to jazz it up!
