Ingredients
Easy Mug Cake
1tspflax seeds
5tbspoat flour
1tbspvegan vanilla protein powder
½tspbaking powder
1tspbrown sugar
3tbspsoy milk
1tbspalmond butter
Instructions
In a small bowl, mix the flax seeds with 2 tsp water. Set aside so the mixture can thicken.
Combine all dry ingredients in a mixing bowl. Stir in soy milk, almond butter, and flax egg replacement.
Lightly grease a large microwave-safe mug (or two small ones) and fill it with your batter.
Place in the microwave for 2-3 minutes, depending on the heat level of your microwave! We usually bake it at medium heat.
Check with a toothpick if your cake is done or needs another round of microwaving!
Enjoy warm on its own or with your favorite toppings.
Notes
Add chopped nuts, chocolate chips, frozen berries, jam, or sprinkle to the cake to jazz it up!
Instead of flax seeds, use any egg replacement. Vegan yogurt works as well!
