Ingredients
Chickpea Veggie Tray Bake
1lbsmall potatoes
2onionswedged
15cherry tomatoes
1 14-ozcan chickpeasdrained and rinsed
2bell pepperssliced
2-3tbspolive oil
2teaspoonsIndian spice mix
Good pinch of salt
Hot paprikaoptional
Instructions
Heat the oven to 400°F/200°C.
Toss all of the ingredients into a large roasting tray. Drizzle with olive oil and add spices to taste.
Stir to combine until everything is coated.
Place in the oven for 20 minutes, then give it a quick stir. Roast for 10 more minutes but watch so that nothing is burning!
Serve warm with fresh herbs and your favorite sauces. Any leftovers make for a great lunch when adding to salad.
