Ingredients

Chickpea Veggie Tray Bake

  • 1 lb small potatoes
  • 2 onions wedged
  • 15 cherry tomatoes
  • 1 14- oz can chickpeas drained and rinsed
  • 2 bell peppers sliced
  • 2-3 tbsp olive oil
  • 2 teaspoons Indian spice mix
  • Good pinch of salt
  • Hot paprika optional

Instructions

  • Heat the oven to 400°F/200°C.
  • Toss all of the ingredients into a large roasting tray. Drizzle with olive oil and add spices to taste.
  • Stir to combine until everything is coated.
  • Place in the oven for 20 minutes, then give it a quick stir. Roast for 10 more minutes but watch so that nothing is burning!
  • Serve warm with fresh herbs and your favorite sauces. Any leftovers make for a great lunch when adding to salad.
