Make your favorite meals vegan-friendly with these fantastic Just Egg recipes! This popular replacement helps you eat more plant-based in no time. Try the following egg-free vegan muffins that come together really easily!

Ingredients

Easy Vegan Muffins

  • 1 ¼ cups all-purpose flour (150 g)
  • ½ cup sugar (100 g)
  • 1 ½ teaspoons baking powder
  • Pinch of salt
  • ½ cup soy milk (120 ml)
  • ¼ cup canola oil (60 ml)
  • 1 teaspoon vanilla extract
  • 6 tablespoons Just Egg

Add-Ins

  • Blueberries
  • Raspberries
  • Raisins
  • Chocolate chips
  • Nuts

Instructions

  1. Preheat your oven to 400° F (200° C) and line a muffin tin with liners.
  2. Combine all of the dry ingredients in a large bowl and mix until well combined: flour, sugar, baking powder, and salt.
  3. Using another bowl, whisk together the wet ingredients for the muffins: soy milk, oil, vanilla, and Just Egg.
  4. Pour the wet over the dry ingredients and add in raisins, nuts, fruit, or chocolate chips to your liking. Mix with a spoon until combined but make sure not to over-mix!
  5. Divide the batter between 12 muffin tins and place in the oven to bake for 20 minutes or until a toothpick inserted in the center comes out clean.
  6. Let the muffins cool before eating! Enjoy.

Notes

  • Use gluten-free flour blends to make these muffins gluten-free.
  • Swap soy milk for almond or oat milk if wanted.
  • Make oil-free muffins by using ¼ cup applesauce instead.
