Vegan Party Pinwheels

Instructions

  1. Let the cream cheese or ricotta soften at room temperature, then add it to a medium bowl together with the sour cream, mustard and spices.
  2. Whisk to combine, then add your finely chopped veggies and stir again.
  3. Spread your filling evenly on your tortillas. Starting at the edge, roll each of the tortillas tightly until you reach the opposite side.
  4. Fasten with a toothpick if needed, then place all rolled tortillas on a plate and put it, covered, in the fridge for at least 2 hours.
  5. Once you’re ready to serve your pinwheels, get the tortillas out of the fridge and cut them into 1-inch pieces with a sharp knife.
  6. Arrange on a platter during your party or get together and enjoy!

Notes

  • Feel free to add any seasonings or herbs of your choice, such as basil, oregano, dill or paprika.
  • Make the pinwheels heartier by adding some vegan cheese shreds or tempeh bacon!
  • Other finely chopped veggies, like broccoli, celery or carrots, can be swapped for the bell pepper and pickles.
