Ingredients

Vegan Party Pinwheels

  • ¾ cup vegan ricotta or cream cheese 180 g
  • ½ cup vegan sour cream 115 g
  • 1 teaspoon mustard
  • ½ teaspoon garlic powder
  • ¼ cup fresh parsley 15 g
  • ¼ teaspoon chili powder
  • Pinch of salt
  • ¼ cup onions finely chopped (50 g)
  • 1 cup bell pepper finely chopped (150 g)
  • ¼ cup pickles finely chopped (50 g)
  • 5 sundried tomatoes finely chopped
  • 6 large tortillas

Instructions

  • Let the cream cheese or ricotta soften at room temperature, then add it to a medium bowl together with the sour cream, mustard and spices.
  • Whisk to combine, then add your finely chopped veggies and stir again.
  • Spread your filling evenly on your tortillas. Starting at the edge, roll each of the tortillas tightly until you reach the opposite side.
  • Fasten with a toothpick if needed, then place all rolled tortillas on a plate and put it, covered, in the fridge for at least 2 hours.
  • Once you’re ready to serve your pinwheels, get the tortillas out of the fridge and cut them into 1-inch pieces with a sharp knife.
  • Arrange on a platter during your party or get together and enjoy!

Notes

  • Feel free to add any seasonings or herbs of your choice, such as basil, oregano, dill or paprika.
  • Make the pinwheels heartier by adding some vegan cheese shreds or tempeh bacon!
  • Other finely chopped veggies, like broccoli, celery or carrots, can be swapped for the bell pepper and pickles.
