Honor Memorial Day with a tasty selection of vegan picnic and BBQ-friendly dishes. Enjoy sweet potato salad, ice cream, mac and cheese, tofu skewers, and more! The following fresh watermelon salad comes together really quickly!

Ingredients

Quick Watermelon Salad

  • Β½ watermelon, cubed
  • Β½ large cucumber, sliced
  • 1 tbsp red onion, minced
  • 1 cup vegan feta cheese
  • 3 tbsp lime juice
  • 2 tbsp olive oil
  • Handful of fresh mint, chopped
  • Salt & pepper to taste

Instructions

  1. Remove the watermelon peel and cut it into cubes. Place them into a large salad bowl together with the cucumber, onion, and vegan feta.
  2. In a small bowl, whisk together the ingredients for the dressing: lime juice, olive oil, salt, and pepper. Adjust to taste preferences, then pour over the watermelon, onion, and feta.
  3. Gently toss, then garnish with fresh mint and chill until ready to serve.
