Honor Memorial Day with a tasty selection of vegan picnic and BBQ-friendly dishes. Enjoy sweet potato salad, ice cream, mac and cheese, tofu skewers, and more! The following fresh watermelon salad comes together really quickly!
Serves 6

Ingredients

Quick Watermelon Salad

  • ½ watermelon cubed
  • ½ large cucumber sliced
  • 1 tbsp red onion minced
  • 1 cup vegan feta cheese
  • 3 tbsp lime juice
  • 2 tbsp olive oil
  • Handful of fresh mint chopped
  • Salt & pepper to taste

Instructions

  • Remove the watermelon peel and cut it into cubes. Place them into a large salad bowl together with the cucumber, onion, and vegan feta.
  • In a small bowl, whisk together the ingredients for the dressing: lime juice, olive oil, salt, and pepper. Adjust to taste preferences, then pour over the watermelon, onion, and feta.
  • Gently toss, then garnish with fresh mint and chill until ready to serve.

Notes

  • Top your salad with roasted pine nuts if wanted!
  • This salad is best served the day of.
