- 3 tbsp lime juice
- 2 tbsp olive oil
- Handful of fresh mint, chopped
- Salt & pepper to taste
Instructions
- Remove the watermelon peel and cut it into cubes. Place them into a large salad bowl together with the cucumber, onion, and vegan feta.
- In a small bowl, whisk together the ingredients for the dressing: lime juice, olive oil, salt, and pepper. Adjust to taste preferences, then pour over the watermelon, onion, and feta.
