Ingredients
Quick Watermelon Salad
½watermeloncubed
½large cucumbersliced
1tbspred onionminced
1cupvegan feta cheese
3tbsplime juice
2tbspolive oil
Handful of fresh mintchopped
Salt & pepper to taste
Instructions
Remove the watermelon peel and cut it into cubes. Place them into a large salad bowl together with the cucumber, onion, and vegan feta.
In a small bowl, whisk together the ingredients for the dressing: lime juice, olive oil, salt, and pepper. Adjust to taste preferences, then pour over the watermelon, onion, and feta.
Gently toss, then garnish with fresh mint and chill until ready to serve.
