Ingredients

Easy Tofu Skewers

  • 8 oz tofu, cubed (225 g)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 zucchini, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 3 tomatoes, sliced
  • 1 onion, sliced
  • Salt and pepper to taste
  • 1-2 tablespoons barbecue sauce

Instructions

  1. Place the tofu cubes in a shallow dish and drizzle with soy sauce and sesame oil. Marinate for 15-30 minutes.
  2. Assemble the skewers by alternating between different vegetables and marinated tofu until everything is used up.
  3. Heat a pan or grill until hot, then cook the skewers on each side for a couple of minutes. The vegetables should become soft but not mushy, and the tofu should turn golden brown. Don’t burn anything but get a lovely char if you want!
  4. Enjoy warm with your favorite dips or on a bed of cauliflower rice.
