Following a low-carb diet? Try these easy and delicious vegan keto recipes for dinner over the next few days! Find colorful bowls, pizza, tacos, soups, chili and an easy keto dinner bowl here. It is loaded with colorful roasted veggies, baked tofu, crunchy lettuce and is easily customizable.
Serves 4

Ingredients

Roasted veggies + tofu

  • 2 bell peppers sliced
  • 1 zucchini sliced
  • 1 cup cauliflower florets
  • 200 g tofu drained and cubed

Marinade

  • ½ cup olive oil
  • ½ tsp garlic powder
  • ½ tsp salt
  • ½ tsp cayenne pepper

For the bowl

  • 2 cups romaine lettuce chopped
  • ½ cup purple cabbage shredded
  • 2 scallions chopped
  • 1 avocado sliced
  • 3 tbsp sunflower seeds
  • Cashew sour cream to taste

Instructions

  • Preheat your oven to 425° F (200° C) and prepare two baking sheets.
  • Mix the marinade in a small bowl with a fork, then prepare the ingredients for your roasted veggies and tofu.
  • Place bell peppers, zucchini, cauliflower and tofu in a single layer on your baking sheets and brush with the marinade.
  • Place in the oven and roast for 20 minutes. Check from time to time to see whether the edges turn dark — in this case, give it a toss and keep roasting.
  • Meanwhile, prepare all of your ingredients to assemble your keto dinner bowl.
  • Divide the lettuce, cabbage and scallions between serving bowls, add the roasted veggies and tofu. Top with avocado and sunflower seeds and drizzle with cashew sour cream!

Notes

  • You can top this bowl with any nuts or seeds of your choice!
  • Swap romaine lettuce for any leafy greens of your choice and feel free to roast eggplant, mushrooms or asparagus instead of the veggies listed.
  • If you don’t have any vegan sour cream on hand, simply drizzle with some tahini.

    • Hi Jason, I don’t think that the patties are keto-approved; too many beans. You could substitute some of them with TVP or more walnuts and then serve with a huge green salad and creamy dressing :) Let us know what you end up doing!

    Good to have a sroll when you’re out of ideas, but I would not use these regularly as there is barely any protein in this food !!!
