Serves 2

Ingredients

Tomato and Chickpea Stew

  • 2 tbsp olive oil
  • 1 onion chopped
  • 3 cloves garlic minced
  • 4 cups fresh tomatoes chopped
  • 1 15- oz can chickpeas drained and rinsed
  • 1 cup vegetable broth
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  • Heat the olive oil in a large pot over medium heat.
  • Add the onion and garlic, and sauté until softened.
  • Add the tomatoes, chickpeas, vegetable broth, cumin, and paprika.
  • Bring to a boil, then reduce the heat and simmer for 20-25 minutes.
  • Season with salt and pepper to taste.
  • Garnish with fresh cilantro before serving.

Notes

  • Any leftovers can be stored in lidded containers in the fridge for up to 3-4 days.
  • Freeze for up to 2-3 months and let thaw overnight.
  • Serve with rice, quinoa, or bread!
