Ratatouille Soup
- 1 tbsp olive oil
- 2 onions, chopped
- 2 cloves garlic, minced
- 2 zucchini, chopped
- 2 summer squash, chopped
- 1-2 tsp Italian seasoning
- 1 can diced tomatoes
- 3 cups veggie broth
- ½ tsp paprika
- Salt & pepper to taste
Instructions
- In a large pot, heat olive oil and onion. Sauté until translucent, then add garlic.
- Cook for another 2-3 minutes, then add zucchini, squash, and Italian seasoning. Sauté for 2 more minutes.
- Add the rest of the ingredients and stir to combine. Bring soup to a boil, then reduce heat to medium and cook for 10 minutes.
- Once the zucchini and squash are soft, adjust the soup to taste preferences and serve hot with some rustic bread. Enjoy!
