Ingredients

Ratatouille Soup

  • 1 tbsp olive oil
  • 2 onions, chopped
  • 2 cloves garlic, minced
  • 2 zucchini, chopped
  • 2 summer squash, chopped
  • 1-2 tsp Italian seasoning
  • 1 can diced tomatoes
  • 3 cups veggie broth
  • ½ tsp paprika
  • Salt & pepper to taste

Instructions

  1. In a large pot, heat olive oil and onion. Sauté until translucent, then add garlic. 
  2. Cook for another 2-3 minutes, then add zucchini, squash, and Italian seasoning. Sauté for 2 more minutes.
  3. Add the rest of the ingredients and stir to combine. Bring soup to a boil, then reduce heat to medium and cook for 10 minutes.
  4. Once the zucchini and squash are soft, adjust the soup to taste preferences and serve hot with some rustic bread. Enjoy!

Notes

  • Feel free to add some cannellini beans or chickpeas to this soup.
  • Any veggies of your choice can also be incorporated!
