Ingredients

Ratatouille Soup

  • 1 tbsp olive oil
  • 2 onions chopped
  • 2 cloves garlic minced
  • 2 zucchini chopped
  • 2 summer squash chopped
  • 1-2 tsp Italian seasoning
  • 1 can diced tomatoes
  • 3 cups veggie broth
  • ½ tsp paprika
  • Salt & pepper to taste

Instructions

  • In a large pot, heat olive oil and onion. Sauté until translucent, then add garlic. 
  • Cook for another 2-3 minutes, then add zucchini, squash, and Italian seasoning. Sauté for 2 more minutes.
  • Add the rest of the ingredients and stir to combine. Bring soup to a boil, then reduce heat to medium and cook for 10 minutes.
  • Once the zucchini and squash are soft, adjust the soup to taste preferences and serve hot with some rustic bread. Enjoy!

Notes

  • Feel free to add some cannellini beans or chickpeas to this soup.
  • Any veggies of your choice can also be incorporated!
