30+ Irish Vegan St. Patrick's Day Recipes
Get your green on with these awesome vegan St. Patrick’s recipes! Including lots of Irish goodness and green color, these ideas are the perfect way to celebrate this holiday. The following cabbage salad is a simple side dish you can add to your menu!
Ingredients
Easy Cabbage Salad
- 3 cups green cabbage, shredded (300 g)
- 1 cup carrots, grated (100 g)
- 1 onion, finely chopped
- Salt & pepper to taste
Dressing
- 4 tablespoons vegan mayo (65 g)
- 1 teaspoon mustard
- 1 teaspoon white vinegar
- ½ teaspoon agave syrup
Instructions
- Make the dressing by adding all ingredients to a medium-sized bowl and whisk until smooth. Taste and adjust to your liking, then set aside.
- Add the shredded cabbage, grated carrot and chopped onion into the bowl, give it a good stir and then massage the veggies with your hands until they soften.
- Cover the bowl and refrigerate your cabbage salad for at least 1 hour before serving!
- Any leftovers can be stored, covered, in the fridge for up to 4 days.
Notes
- You can also use sour cream instead of mayo for the dressing and swap the agave syrup for any other sweetener.
- Add some celery seeds to your salad if you’re up for it!
