Ingredients

Easy Cabbage Salad

  • 3 cups green cabbage shredded (300 g)
  • 1 cup carrots grated (100 g)
  • 1 onion finely chopped
  • Salt & pepper to taste

Dressing

  • 4 tablespoons vegan mayo 65 g
  • 1 teaspoon mustard
  • 1 teaspoon white vinegar
  • ½ teaspoon agave syrup

Instructions

  • Make the dressing by adding all ingredients to a medium-sized bowl and whisk until smooth. Taste and adjust to your liking, then set aside.
  • Add the shredded cabbage, grated carrot and chopped onion into the bowl, give it a good stir and then massage the veggies with your hands until they soften.
  • Cover the bowl and refrigerate your cabbage salad for at least 1 hour before serving!
  • Any leftovers can be stored, covered, in the fridge for up to 4 days.

Notes

  • You can also use sour cream instead of mayo for the dressing and swap the agave syrup for any other sweetener.
  • Add some celery seeds to your salad if you’re up for it!
