Pineapple Fried Rice
1 tablespoon sesame oil
1 onion, diced
1 tablespoon fresh ginger, minced
1 cup finely chopped veggies of choice (130 g)
1 ½ cups pineapple, cubed (340 g)
¼ - ½ cup stir fry sauce
4 oz firm tofu (110 g), crumbled
3 cups cooked rice (600 g)
Place a large pan over medium heat and add sesame oil and onion. Cook for 5 minutes, stirring occasionally.
Add ginger, veggies, and pineapple. Cook until soft, then add tofu and the stir-fry sauce. Cook for 5-7 minutes, stirring frequently.
Add cooked rice, mix thoroughly, and heat until warm.
Serve topped with fresh herbs or green onion!
