These crowd-pleasing vegan pasta recipes will make anyone fall in love with plant-based food! Including seasonal, light, hearty and cheesy ideas for the whole family. The following quick and easy lemon ricotta pasta is perfect during the warmer months and so delicious!
Serves 3

Ingredients

Lemon Ricotta Pasta

  • 8 oz spaghetti 220 g, dry
  • 8 oz vegan ricotta 220 g
  • 8 oz fresh spinach 220 g, washed and chopped
  • 1 oz vegan parmesan cheese 28 g
  • 1 lemon juiced
  • 1 tablespoon olive oil
  • Black pepper to taste
  • Salt to taste

Instructions

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions.
  • A few minutes before the spaghetti is al dente, add the spinach to the pot. Stir until everything is covered with water. Drain once the leafy greens are wilted and the pasta is cooked.
  • Reserve ½ cup of the cooking water and pour it back into the pot. Stir in ricotta, parmesan, lemon juice, olive oil, salt and pepper. Mix until well combined, then add the drained pasta and spinach.
  • Adjust to taste preferences and add more water if needed to thin out. Divide between serving bowls and enjoy!

Notes

  • We like to decorate this pasta with red pepper flakes, more parmesan or basil leaves.
  • You can use any pasta you want for this recipe and omit the spinach if you don’t like it.

    i have a follow up question, could you please recommend a type of pasta that has low glycemic index. I notice when I use regular pasta, it spikes my blood sugar drastically.
