Black beans take center stage in these mouthwatering recipes. This selection includes desserts, casseroles, Mexican-inspired favorites, and burgers, all made from an affordable staple ingredient! The following vegan black bean quesadillas are a great quick meal idea.
Serves 4

Ingredients

Black Bean Quesadillas

  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 1 small zucchini chopped
  • 1 small onion diced
  • 1 small jalapeño seeded and diced
  • 1 tsp cumin ground
  • Pinch of cayenne pepper
  • 1 cup cooked black beans drained
  • Salt & pepper to taste
  • Cilantro optional
  • 2 avocados mashed
  • 4 tortillas

Instructions

  • Place a large skillet over medium-high heat and add the olive oil.
  • Once hot, add garlic, onion, zucchini, and jalapeño. Cook for 5 minutes, stirring frequently. Add all of the spices (cumin, cayenne, salt, paprika) and black beans. 
  • Stir to combine, then remove from heat and add fresh cilantro if wanted.
  • Spread ¼ of the mashed avocado onto half of a tortilla. Top with the bean and vegetable mixture and fold the tortilla. Repeat with the remaining ingredients.
  • Place a lightly greased skillet over medium heat and cook the tortillas for 3-5 minutes each. Once brown and crips, flip to cook the other side. Enjoy!

Notes

  • Feel free to use chili powder instead of cayenne.
  • Olive oil can be replaced with water or vegetable broth for fewer calories.
