Black Bean Quesadillas
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 small zucchini, chopped
- 1 small onion, diced
- 1 small jalapeño seeded and diced
- 1 tsp cumin, ground
- Pinch of cayenne pepper
- 1 cup cooked black beans, drained
- Salt & pepper to taste
- Cilantro, optional
- 2 avocados, mashed
- 4 tortillas
Instructions
- Place a large skillet over medium-high heat and add the olive oil.
- Once hot, add garlic, onion, zucchini, and jalapeño. Cook for 5 minutes, stirring frequently. Add all of the spices (cumin, cayenne, salt, paprika) and black beans.
- Stir to combine, then remove from heat and add fresh cilantro if wanted.
- Spread ¼ of the mashed avocado onto half of a tortilla. Top with the bean and vegetable mixture and fold the tortilla. Repeat with the remaining ingredients.
- Place a lightly greased skillet over medium heat and cook the tortillas for 3-5 minutes each. Once brown and crips, flip to cook the other side. Enjoy!
