Ingredients
Black Bean Quesadillas
1tbspolive oil
2clovesgarlicminced
1small zucchinichopped
1small oniondiced
1small jalapeño seeded and diced
1tspcuminground
Pinchof cayenne pepper
1cupcooked black beansdrained
Salt & pepper to taste
Cilantrooptional
2avocadosmashed
4tortillas
Instructions
Place a large skillet over medium-high heat and add the olive oil.
Once hot, add garlic, onion, zucchini, and jalapeño. Cook for 5 minutes, stirring frequently. Add all of the spices (cumin, cayenne, salt, paprika) and black beans.
Stir to combine, then remove from heat and add fresh cilantro if wanted.
Spread ¼ of the mashed avocado onto half of a tortilla. Top with the bean and vegetable mixture and fold the tortilla. Repeat with the remaining ingredients.
Place a lightly greased skillet over medium heat and cook the tortillas for 3-5 minutes each. Once brown and crips, flip to cook the other side. Enjoy!
Notes
Feel free to use chili powder instead of cayenne.
Olive oil can be replaced with water or vegetable broth for fewer calories.
