Whip up this treat in only 5 minutes! My easy vegan avocado toast recipe is perfect for breakfast (or really, any time of day.) Customize it to your liking!

There’s a reason avocado toast is so popular — it’s yummy, simple, and extremely versatile. The crispy bread paired with creamy avocado is divine. 

You can add anything you like on your avocado toast, but I chose cherry tomatoes, sprouts, and a mix of balsamic glaze and olive oil.

To make this easy vegan avocado toast, you’ll need a knife, fork, cutting board, and something to toast your bread in (toaster, skillet, grill pan, or oven). Let’s get started!

Ingredients needed

  • Bread — I love using sourdough! Use the bread you prefer.
  • Avocado — of course :) creamy and delicious.
  • Cherry tomatoes — extra veg and adds some acidity.
  • Sprouts or microgreens — adds nutrients and texture.
  • Balsamic glaze, olive oil, salt, pepper — basic seasonings to boost flavor. 
  • Mixed seeds, optional — for that added crunch factor.

How to make this easy vegan avocado toast

  1. Toast your bread in a toaster, toaster oven, grill pan, oven, or skillet until you’ve reached your desired level of crispiness.
  2. Mash the avocado in a small bowl with a fork and season with salt and pepper. Spread on your toasted bread.
  3. Decorate with halved cherry tomatoes and drizzle with balsamic glaze and olive oil (or toppings of choice). Top with sprouts and mix seeds. Enjoy!

FAQs

Can I store avocado toast?

I don’t recommend it! The bread can easily soak in the moisture from the avocado. And there’s nothing worse than soggy toast! Eat your avocado toast as soon as possible after it’s been prepared. 

How do I pick a ripe avocado?

Good question! Some stores label the avocado ripeness and you can choose from a selection. Alternatively, you can press down on the avocado with your fingers (firm yet gentle) to determine ripeness. If it’s soft, not mushy, it’s probably ripe. If it doesn’t give way to pressure, it’s not ripe yet. 

Do I have to mash the avocado in a bowl? Can’t I mash on the toast directly?

You can do whatever you like! I prefer mashing in a bowl so I don’t put too much pressure on the toast (and risk crumbling it). A bowl is helpful because you can mix in seasonings too.

Ingredients

  • 4 slices sourdough bread
  • 1 ripe avocado
  • 12 cherry tomatoes halved
  • 1 teaspoon balsamic glaze
  • 1 teaspoon olive oil
  • Salt and pepper to taste
  • Handful of sprouts or microgreens
  • Mixed seeds optional

Instructions

  • Toast your bread in a toaster, toaster oven, grill pan, oven, or skillet until you’ve reached your desired level of crispiness.
  • Mash the avocado in a small bowl with a fork and season with salt and pepper. Spread on your toasted bread.
  • Decorate with halved cherry tomatoes and drizzle with balsamic glaze and olive oil (or toppings of choice). Top with sprouts and mix seeds. Enjoy!

  • We don’t recommend storing. Eat as soon as possible after preparation.
