Ingredients

Hearty Seitan Stew

  • 1 tbsp olive oil
  • 8 oz seitan, cubed
  • 2 onions, chopped
  • 1 cup mushrooms, diced
  • 2 carrots, diced
  • 3 cloves garlic, minced
  • 1 tsp rosemary, dry
  • 1 tsp thyme, dry
  • 1 tsp paprika
  • 3 cups vegetable broth
  • 1 lb potatoes, peeled and cubed

Instructions

  1. Place a large pot over medium heat and add the olive oil. Sauté seitan for 2 minutes, then add onions and mushrooms. Cook until translucent, then add the garlic and cook for one more minute.
  2. Add carrots, spices, potatoes, and vegetable broth, then bring to a boil. Lower heat and let the soup simmer for 15-18 minutes, until the potatoes are fork tender.
  3. Add seitan and season with salt and pepper to taste. Cook for 5 more minutes, then serve warm. Enjoy!

Notes

  • Feel free to add some starch to thicken your stew if wanted.
