Ingredients
Hearty Seitan Stew
- 1 tbsp olive oil
- 8 oz seitan, cubed
- 2 onions, chopped
- 1 cup mushrooms, diced
- 2 carrots, diced
- 3 cloves garlic, minced
- 1 tsp rosemary, dry
- 1 tsp thyme, dry
- 1 tsp paprika
- 3 cups vegetable broth
- 1 lb potatoes, peeled and cubed
Instructions
- Place a large pot over medium heat and add the olive oil. Sauté seitan for 2 minutes, then add onions and mushrooms. Cook until translucent, then add the garlic and cook for one more minute.
- Add carrots, spices, potatoes, and vegetable broth, then bring to a boil. Lower heat and let the soup simmer for 15-18 minutes, until the potatoes are fork tender.
- Add seitan and season with salt and pepper to taste. Cook for 5 more minutes, then serve warm. Enjoy!
