Make these delicious vegan Vietnamese recipes from salads to rolls, curry, soup, sandwiches, iced coffee, and more! Protein-rich, flavorful, and fresh.
Serves 3

Ingredients

Tofu in Tomato Sauce

  • 14 oz firm tofu, pressed and cut into bite-sized cubes
  • 2 tablespoons vegetable oil
  • 3 ripe tomatoes chopped
  • 2 cloves garlic minced
  • 1 tablespoon soy sauce or to taste
  • 1 teaspoon sugar
  • Salt to taste
  • Green onions chopped (for garnish)
  • Fresh cilantro chopped (optional, for garnish)

Instructions

  • Heat 1 tbsp of vegetable oil in a pan over medium heat. Add the tofu cubes and fry until all sides are golden brown. Remove tofu from the pan and set aside.
  • Using the same pan, sauté minced garlic in another tablespoon of oil. Once the garlic is fragrant, add the chopped tomatoes to the pan.
  • Cook until the tomatoes start to break down and form a sauce. Stir in soy sauce, sugar, and salt. Adjust to taste and mix well to combine.
  • Put the fried tofu back into the pan with the tomato sauce. Gently stir and cook for another 2-3 minutes to allow the tofu to absorb the flavors.
  • Serve warm with green onions and cilantro as a topping. Enjoy with steamed rice!

Notes

  • This recipe is called “Đậu Phụ Sốt Cà Chua” in Vietnamese and is quick and easy to prepare.
  • If you're serving a larger group or want leftovers, you can easily double the recipe.
