Ingredients

Pineapple Fried Rice

  • 1 tablespoon sesame oil
  • 1 onion, diced
  • 1 tablespoon fresh ginger, minced
  • 1 cup finely chopped veggies of choice (130 g)
  • 1 ½ cups pineapple, cubed (340 g)
  • ¼ - ½ cup stir fry sauce
  • 4 oz firm tofu (110 g), crumbled
  • 3 cups cooked rice (600 g)

Instructions

  1. Place a large pan over medium heat and add sesame oil and onion. Cook for 5 minutes, stirring occasionally.
  2. Add ginger, veggies, and pineapple. Cook until soft, then add tofu and the stir-fry sauce. Cook for 5-7 minutes, stirring frequently.
  3. Add cooked rice, mix thoroughly, and heat until warm.
  4. Serve topped with fresh herbs or green onion!

Notes

  • Carrots, bell pepper, zucchini, broccoli, and mushrooms work well for this recipe.
  • Make it oil-free by sautéing your veggies in water or broth.
