Ingredients
Pineapple Fried Rice
1tablespoonsesame oil
1oniondiced
1tablespoonfresh gingerminced
1cupfinely chopped veggies of choice130 g
1 ½cupspineapplecubed (340 g)
¼ - ½cupstir fry sauce
4ozfirm tofu110 g, crumbled
3cupscooked rice600 g
Instructions
Place a large pan over medium heat and add sesame oil and onion. Cook for 5 minutes, stirring occasionally.
Add ginger, veggies, and pineapple. Cook until soft, then add tofu and the stir-fry sauce. Cook for 5-7 minutes, stirring frequently.
Add cooked rice, mix thoroughly, and heat until warm.
Serve topped with fresh herbs or green onion!
Notes
Carrots, bell pepper, zucchini, broccoli, and mushrooms work well for this recipe.
Make it oil-free by sautéing your veggies in water or broth.
