Ingredients
Tofu in Tomato Sauce
14ozfirm tofu, pressed and cut into bite-sized cubes
2tablespoonsvegetable oil
3ripe tomatoeschopped
2clovesgarlicminced
1tablespoonsoy sauceor to taste
1teaspoonsugar
Salt to taste
Green onionschopped (for garnish)
Fresh cilantrochopped (optional, for garnish)
Instructions
Heat 1 tbsp of vegetable oil in a pan over medium heat. Add the tofu cubes and fry until all sides are golden brown. Remove tofu from the pan and set aside.
Using the same pan, sauté minced garlic in another tablespoon of oil. Once the garlic is fragrant, add the chopped tomatoes to the pan.
Cook until the tomatoes start to break down and form a sauce. Stir in soy sauce, sugar, and salt. Adjust to taste and mix well to combine.
Put the fried tofu back into the pan with the tomato sauce. Gently stir and cook for another 2-3 minutes to allow the tofu to absorb the flavors.
Serve warm with green onions and cilantro as a topping. Enjoy with steamed rice!

This recipe is called “Đậu Phụ Sốt Cà Chua” in Vietnamese and is quick and easy to prepare.
