Ingredients

Cantaloupe Soup

  • 1 large cantaloupe
  • ⅓ cup orange juice
  • 1 cup soy yogurt, unflavored
  • 1 tbsp agave syrup
  • 1 tbsp white wine vinegar
  • Basil leaves
  • Salt, to taste

Instructions

  1. Cut and peel the cantaloupe melon. Remove all seeds and fibers, then cut it into cubes.
  2. In a blender, combine all the ingredients except for basil. Puree until smooth, then season to taste with salt, orange juice, and vinegar.
  3. Serve in small bowls garnished with basil leaves. Enjoy!

Notes

  • Other garnishes include orange slices and mint springs.
  • Use your favorite plant-based yogurt for this recipe!
  • Make this soup richer by adding a spoonful of nut or seed butter.
  • This soup can be made 1-2 days in advance. Keep refrigerated.
