Serves 3

Ingredients

Cantaloupe Soup

  • 1 large cantaloupe
  • cup orange juice
  • 1 cup soy yogurt unflavored
  • 1 tbsp agave syrup
  • 1 tbsp white wine vinegar
  • Basil leaves
  • Salt to taste

Instructions

  • Cut and peel the cantaloupe melon. Remove all seeds and fibers, then cut it into cubes.
  • In a blender, combine all the ingredients except for basil. Puree until smooth, then season to taste with salt, orange juice, and vinegar.
  • Serve in small bowls garnished with basil leaves. Enjoy!

Notes

  • Other garnishes include orange slices and mint springs.
  • Use your favorite plant-based yogurt for this recipe!
  • Make this soup richer by adding a spoonful of nut or seed butter.
  • This soup can be made 1-2 days in advance. Keep refrigerated.
