These festive vegan Thanksgiving recipes are so delicious and sure to impress everyone around the table! From beautiful centerpieces to easy sides and hearty mains, this collection has it all. And for the day after Thanksgiving, why not turn your leftovers into a delicious wrap? Find the easy and customizable recipe below.
Serves 2

Ingredients

Vegan Thanksgiving Leftover Wraps

  • 2 tortillas of choice
  • 4 slices of vegan holiday roast or baked tempeh
  • 4 tablespoons vegan gravy
  • ½ cup mashed potatoes 125 g
  • 1 handful mixed Fall salad leafy greens, roasted carrots, red cabbage, etc.
  • 2-3 tablespoons cranberry sauce

Instructions

  • Reheat your leftover gravy and sliced vegan roast or tempeh using a microwave or stove.
  • Divide the leftover mashed potatoes between two tortillas and spread them evenly on the bottom ⅓ of each wrap, leaving some room at the bottom edge.
  • Drizzle the potato layer with warm gravy, then add 2 slices of vegan roast on each tortilla.
  • Now add some roasted or fresh veggies from Thanksgiving, this can be a mixed fall salad or maple carrots etc.
  • Top with cranberry sauce, then fold each tortilla tightly, tucking in all of the veggies with the first roll then rolling firmly to the end.
  • Cut in half and enjoy!

Notes

  • Other delicious add-ins include dried cranberries, yogurt garlic sauce, cashew mayo, chickpeas, baked sweet potatoes, beet hummus and toasted pumpkin seeds.

  1. I’m not vegan but our granddaughters are and their brother is vegetarian. I’m the only one of their relatives that makes food specifically for them. I was looking for an entree for them and have decided on the Stuffed Butternut Roast. I make almost all the sides vegan friendly. For their dessert I plan on making the Upside Down Pecan Praline Pumpkin Cake. I think these will be a hit.

  2. YES! ALL of them! My husband and I have changed our eating habits to plant based. No sugar (because my husband has cancer. He is not doing chemo or radiation). He had 2 kinds of cancer which are in remission because of his diet of plant based eating however he has still eaten chicken. We are trying to go vegan all the way. No meat!
    I look forward to getting these recipes
