Ingredients

Pimientos de Padrón

  • 1 lb Padrón peppers 500 g
  • Olive oil for frying
  • Coarse sea salt to taste

Instructions

  • Rinse the peppers under cold water and dry them with paper towels.
  • Heat a large frying pan over medium heat and add olive oil. Once the oil is hot, add the peppers in a single layer, working in batches if necessary.
  • Fry the peppers for about 2-4 minutes, turning them occasionally, until they start to blister on all sides.
  • Remove the peppers from the pan with a slotted spoon and transfer to a serving plate. Sprinkle generously with coarse salt while still hot. Serve warm!
