From spiced lentils to couscous salad, wraps, and shakshuka — you’ll love these flavorful vegan Moroccan recipes! Try these crowd-pleasing sweet and savory ideas for the whole family.

Ingredients

Moroccan Carrot Salad

  • 1 lb carrots peeled and grated
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 2 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons fresh parsley chopped
  • 2 tablespoons fresh cilantro chopped

Instructions

  • Prepare the carrot as written in the ingredients list. Use a food processor or grater to create thin, bite-sized pieces for your salad.
  • In a small bowl, whisk together the olive oil, lemon juice, minced garlic, ground cumin, paprika, cinnamon, ginger, salt, and black pepper.
  • In a large bowl, combine the grated carrots and dressing. Toss well to ensure everything is coated evenly, then add the fresh herbs and toss again.
  • Cover the bowl and place it in the refrigerator for at least 30 minutes. This allows the flavors to meld together. Toss again right before serving. Enjoy!

  • Use sweet or smoked, according to your preference.
