Ingredients
Moroccan Carrot Salad
1lbcarrotspeeled and grated
2tablespoonsolive oil
1tablespoonlemon juice
2clovesgarlicminced
1teaspoonground cumin
1teaspoonpaprika
½teaspoonground cinnamon
¼teaspoonground ginger
½teaspoonsalt
¼teaspoonblack pepper
2tablespoonsfresh parsleychopped
2tablespoonsfresh cilantrochopped
Instructions
Prepare the carrot as written in the ingredients list. Use a food processor or grater to create thin, bite-sized pieces for your salad.
In a small bowl, whisk together the olive oil, lemon juice, minced garlic, ground cumin, paprika, cinnamon, ginger, salt, and black pepper.
In a large bowl, combine the grated carrots and dressing. Toss well to ensure everything is coated evenly, then add the fresh herbs and toss again.
Cover the bowl and place it in the refrigerator for at least 30 minutes. This allows the flavors to meld together. Toss again right before serving. Enjoy!
