For our creamy pineapple salad dressing, we decided on a Caribbean-inspired flavor profile.

To make our creamy pineapple salad dressing, you’ll need a bowl and measuring utensils.

Ingredients needed

  • Soy yogurt — a creamy base for the dressing. You could use coconut yogurt as well.  
  • Pineapple juice — adds some sweetness
  • Lime juice — for that fresh zestiness!
  • Olive oil — adds a little richness
  • Thyme, cumin, paprika, salt, cayenne — our Caribbean seasonings.

How to make this pineapple salad dressing

  1. Add all ingredients to a bowl and whisk to combine.
  2. Taste and adjust as needed. Add more lime juice for acidity, pineapple juice for sweetness, etc. 
  3. Drizzle over your salad or bowl of your choice!

Storage 

Store our creamy pineapple salad dressing in an airtight container in the fridge for 3-4 days. We do not recommend freezing.

Here are some customizations while trying to maintain that Caribbean flavor!

Swaps

  • Swap pineapple juice with mandarin juice
  • Swap soy yogurt with coconut yogurt

Add these in moderation and taste as you go.

Canned or fresh pineapple juice?

Whichever is more accessible! We use canned juice since we’re using canned pineapples in the Caribbean salad. 

How long does this last in the fridge? 

3-4 days in an airtight container. 

Can I add other seasonings to the dressing?

Yes, you can! Other Caribbean seasonings you can add are ginger, cinnamon, nutmeg, allspice, and garlic. Make sure to add in very small amounts and taste as you go.

Ingredients

  • cup soy yogurt 80 g
  • ½ cup pineapple juice 118 ml
  • cup lime juice 75 ml
  • 2 tbsp olive oil
  • 1 tsp thyme
  • ½ tsp cumin
  • ½ tsp paprika
  • ½ tsp salt
  • Dash cayenne

Instructions

  • Add all ingredients to a bowl and whisk to combine.
  • Taste and adjust as needed. Add more lime juice for acidity, pineapple juice for sweetness, etc. 
  • Drizzle over your salad or bowl of your choice!
