How to Make Gluten-Free Buckwheat Bread From Scratch
Our gluten-free buckwheat bread doesn’t require any kneading or advanced kitchen skills! Because we won’t use any yeast or sourdough to make this savory, nutty loaf, it’s super beginner-friendly.
All you need is one bowl, a food processor and 10 minutes of preparation time. Start by putting your buckwheat groats, flaxseeds and water into a medium-sized bowl, cover, and let everything soak for at least 2 hours — better overnight.
Once you’re ready to make your easy buckwheat bread, simply place all of the ingredients from that bowl into a food processor jar, add some rolled oats, applesauce, tahini and baking powder, and let the machine do its work!
You’ll be left with a homogenous and slightly sticky mixture which you just need to pour into a loaf pan and top with your favorite seeds before baking it for around 1.5 hours in the oven.
Even though it might be tough, try to let your freshly baked buckwheat bread cool off before taking it out of the pan and enjoying your first warm slice!

Buckwheat Bread Ingredients
- Buckwheat Groats — soaked in water for a few hours or overnight, they are processed into gluten-free bread batter so you don’t even need that fancy buckwheat flour.
- Rolled Oats — can be skipped or doubled depending on your desired taste and consistency!
- Flaxseeds — these are used for binding the ingredients in place of eggs; you can swap them for chia seeds if you like.
- Applesauce — our favorite oil replacement to hold the moisture when baking! Plus, it helps the toppings stick.
- Tahini — we love this creamy addition but if you don’t have any, either replace with any nut or seed butter or omit
- Baking Powder — since this is a yeast-free recipe, we do need to make this buckwheat bread rise somehow! And voilà.
- Toppings — sesame, sunflower, flax, rolled oats, whatever you like! Or just keep it naked.
For a sweeter version of this bread, you can replace some of the buckwheat groats with more rolled oats and add some maple syrup or date paste to the gluten-free bread batter. Other ideas include mashed banana and chocolate chips!

Best Gluten-Free Buckwheat Bread Recipe
The easiest and best vegan buckwheat bread with crispy edges and a deliciously nutty flavor. This gluten-free savory loaf slices well, doesn’t require any kneading, yeast or bread machine and is so nutritious! Try it with some almond ricotta, hummus, avocado or nut butter.
Ingredients
- 2 cups buckwheat groats (330 g)
- 2 tbsp rolled oats
- 2 tbsp flaxseeds
- 1 ⅓ cup water (320 ml)
- 2 tbsp applesauce, unsweetened (plus extra for brushing)
- 1 tbsp tahini
- 2 tsp baking powder
- 1 tsp salt
Toppings
- Sesame
- Sunflower
- Flax
Instructions
- Put the buckwheat groats and flaxseeds into a bowl, mix and cover with 1 ⅓ cups water. Let everything soak for at least two hours or overnight.
- Once you’re ready to make your buckwheat oat bread, preheat the oven to 320 °F (160 °C).
- Transfer the wet buckwheat flaxseed mixture (including the water) together with the rest of the ingredients for your gluten-free bread into your food processor and process to obtain a homogenous batter.
- Line a baking pan with parchment paper, scoop the mixture into the pan and flatten it evenly with a spoon.
- Brush your buckwheat oat batter with just a little bit of applesauce, then top with mixed seeds.
- Bake the bread for 90 minutes, then remove the pan from the oven and set your freshly baked bread aside for 10 minutes before removing from the pan.
- Let the buckwheat oat bread cool before slicing and serve it plain, with hummus or soup.
Notes
- The bread keeps well for about a week in the fridge and can be frozen once sliced.
- For a sweeter version, replace some of the buckwheat with more oats, use plant-based milk together with the water and add some vegan syrup.
- Make sure to allow the bread to cool down before removing it from the pan and slicing it to make sure it doesn’t fall apart.
- Depending on your oven, the baking time may vary so check on your bread after an hour.
