No need to heat up your kitchen with these delicious vegan summer salads! With some fresh produce, vegan dressings and tasty add-ins, you can have a flavorful, healthy and wonderfully textured vegan salad on the table in under 30 minutes.

Ingredients

Easy Summer Salad

  • Mixed leafy greens
  • Arugula
  • Red or green onion
  • Carrot grated
  • Cucumber
  • Tomato
  • Sweet corn
  • Chickpeas
  • Pickles
  • Pumpkin or sunflower seeds raw or toasted

Instructions

  • Wash and chop all of your fresh ingredients. 
  • Add leafy greens to a large bowl and top with all of the other goodness you want to add to your salad.
  • Either use a store-bought vegan dressing or choose one from our list and prepare it in a food processor or small bowl.
  • Give it a good mix, top with crunchy nuts and seeds and enjoy immediately!

Notes

  • If you want to meal prep your vegan salad, store the leafy greens, other veggies and dressing separately. Once ready to eat, combine everything in a bowl or container and mix!
  • You can also add smoked tempeh, baked tofu cubes, vegan mock meat, cooked grains or fresh fruit to your summer salad!
