Ingredients
Sweet Potato Soup
1tablespoonolive oil
1onionchopped
2clovesgarlicchopped
2celery stalkschopped
2large sweet potatoescubed (about 5 cups)
4cupsvegetable broth
½teaspooncinnamon
¼teaspoonnutmeg
Pinchof ginger powder
1cupcoconut milk240 ml
Instructions
Place a large pot over medium heat and sauté onion, garlic, and celery in olive oil for 3-4 minutes. Stir occasionally.
Add the sweet potatoes, broth, and spices. Bring to a boil, then heat and let it simmer for 20 minutes or until the sweet potatoes are soft.
Pour in the coconut milk, then puree the soup using an immersion blender. Adjust to taste preferences and serve warm with a side of crusty bread or salad!
Notes
Sprinkle with additional pepper and make pretty swirls using vegan sour cream if wanted.
