Ingredients

Sweet Potato Soup

  • 1 tablespoon olive oil
  • 1 onion chopped
  • 2 cloves garlic chopped
  • 2 celery stalks chopped
  • 2 large sweet potatoes cubed (about 5 cups)
  • 4 cups vegetable broth
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • Pinch of ginger powder
  • 1 cup coconut milk 240 ml

Instructions

  • Place a large pot over medium heat and sauté onion, garlic, and celery in olive oil for 3-4 minutes. Stir occasionally.
  • Add the sweet potatoes, broth, and spices. Bring to a boil, then heat and let it simmer for 20 minutes or until the sweet potatoes are soft.
  • Pour in the coconut milk, then puree the soup using an immersion blender. Adjust to taste preferences and serve warm with a side of crusty bread or salad!

Notes

  • Sprinkle with additional pepper and make pretty swirls using vegan sour cream if wanted.
  • Any leftover soup can be stored in an airtight container in the fridge for several days. Be sure to let it cool completely before transferring it!
